Along with being the center of the Roman Empire and the seat of Christianity, Rome is also home to the oldest Jewish community outside the Middle East and over 2000 years of a Jewish presence here have left its indelible mark on the Roman cuisine. Fried zucchine flowers, artichokes alla Giudia, rigatoni all’amatriciana, penne all’arrabbiata, gnocchi alla romana, saltimbocca, pollo with peperoni (chicken with bell peppers), baccalà, coda alla vaccinara (oxtail stew) Need we say more? Sign up for one or more three-hour cooking classes with Giulia and choose your favourites.
